Young Brie (45+ days prior to the best before date) has a firm centre and mild flavour; semi-ripened Brie (20-45 days prior to the best before date) has a soft rind with a medium-soft centre and mild flavour; ripened Brie (20 days or less prior to the best before date) is soft.
