Carnival squash is a winter squash hybrid of sweet dumpling and acorn squash. It has green, orange, white, and yellow skin and the pale orange flesh is nutty and sweet. Use carnival squash in the same ways as acorn squash, such as puréed and added to soup or halved and baked as a side dish.
